I’ve noticed a trend in my favourite fast dishes- they’re all bowls full of veggies and grains 🙂 when I’m in a hurry, I like to pick up a burrito bowl {brown rice, veggies, beans, guacamole, salsa, and a sprinkling of cheese} or a Pan-Asian stir fry bowl {rice, stir fried veggies, tofu, and a sweet and spicy sauce}.

There’s something amazing about piling a variety of fresh ingredients in a bowl. So easy, so yummy, and so healthy!

I started making sushi bowls in my first year of university. All I had in my tiny room was a rice cooker and a blender. I wanted to make sushi, since I had all of the ingredients and a real craving, but once it came to rolling out the sushi I realized I didn’t have enough room to roll out and cut my sushi.

So of course I just threw everything in a bowl and chowed down! Yum!

This sushi bowl is made with brown rice which is packed with nutrients. The veggies- avocado, cucumber, asparagus, and carrots add a fresh crunch and some creaminess. Super delicious and full of vitamins.

I really love the variety of textures and colours in this bowl- healthy food doesn’t have to be boring 🙂

I love making this bowl because it’s just so easy- wait for your rice to cook, roast your asparagus for a few minutes, then throw everything in a bowl! It has a restaurant dinner feel but it’s super simple and budget friendly 🙂

Veggie Sushi Bowl

Ingredients

  • 1 cup of brown rice or sticky rice dry
  • 2 teaspoons of rice vinegar
  • 8 asparagus spears woody ends trimmed
  • 1 avocado sliced
  • 1/2 cucumber cut into thin strips
  • 1/4 cup of shredded carrots
  • 1 sheet of nori cut into ribbons *see note
  • sesame seeds for garnish
  • soy sauce

Instructions

  1. Preheat oven to 425F
  2. Cook rice according to package. Then mix with rice vinegar.
  3. Coat asparagus with olive oil and roast on a baking sheet for 10-15 minutes, flipping over halfway through.
  4. To assemble each sushi bowl, place half the rice in a bowl. Top with 4 asparagus spears, half the avocado slices, half the cucumber strips, and half of the shredded carrots. Place nori ribbons on top and sprinkle with sesame seeds. Add soy sauce to taste.

  2. Love it. I always think of asparagus as a spring vegetable but it is nice whenever you get it, especially in quick and easy bowls such as this. I agree, one pot meals (veg+bean+whole grain) are a staple in my diet, too.
