I love breakfast, I think it may just be my favourite meal of the day. I’m definitely a savoury breakfast kinda gal. Not to say I don’t love a good waffle from time to time. But I love veggies in the morning 🙂
This Fajita Bowl is a super flavourful morning meal. Say goodbye to boring bagels 😉 This bowl has healthy fats, veggies, and protein. A perfect start to your day, and it’ll keep you full til lunch!
I clearly love Mexican food. It seems like half the recipes on my blog are inspired by Mexican flavours! I just love the bright flavours and copious amount of veggies. And of course avocado. Yum!
And who says you can’t have Mexican food in the morning?! Boring people, that’s who.
Veggie Breakfast Fajita Bowl
- 1 bell pepper sliced
- 1 onion sliced thinly
- 1 clove of garlic minced
- 4 eggs
- 2 tablespoons milk
- 1 avocado sliced
- olive oil
- salt & pepper

Heat about a tablespoon of oil in a large pan on high heat. Add peppers, onions, and garlic. Sprinkle with a pinch of salt and a dash of cumin. Cook, stirring frequently, until browned. About 10-15 minutes.
Crack eggs into a bowl. Add milk, a pinch of salt, and some freshly cracked pepper and whisk until beaten well.
In a small pan, heat a small amount oil at medium heat. Add egg mixture and stir occasionally until eggs are no longer runny but soft and fluffy.
To serve, place half the scrambled eggs in a bowl. Top with half the veggies and avocado slices. Drizzle [Tangy Chipotle Sauce | http://www.therefreshanista.com/tangy-chipotle-sauce/] on top.
