If you’re looking for something fresh and light, summer rolls are the perfect dish: rice paper rolls stuffed with fresh crunchy veggies and creamy avocado. Perfect for dipping in thai peanut sauce. These are great because you can customize them with your favourite veggies. You could add slices of bell pepper or really anything you would put in a salad 🙂

I still remember the first time I made summer rolls, YUM. I’m a big fan of avocado and I loved the creaminess of the avocado combined with fresh, crunchy veggies. Like a tasty salad wrapped up in a dippable roll!

These summer rolls would also be great party food as a lighter appetizer! They’re interesting and different and perfectly dippable. Your friends will be surprised that you made them, not knowing they’re super easy!

Vegetable Summer Rolls

Ingredients

  • 6 rice paper wrappers
  • 1/2 head of lettuce (choose a soft, buttery lettuce like Bibb)
  • 1 medium carrot peeled then shredded or julienned
  • 1 avocado sliced
  • 1/2 cucumber cut into thin strips
  • 6 inch green onions cut off about an of the dark green top and an inch of the white part so you are left with the middle

Instructions

  1. Begin by pouring an inch of warm, almost hot water into a large dish. Take a sheet of rice paper and submerge in the water until the paper softens, being careful not to rip it.
  2. Lay flat on a clean surface and place one leaf of lettuce in the centre. Add carrot, avocado, cucumber, and one green onion on top.
  3. Fold in the left and right sides of the paper then lift the edge of the paper that is closest to you over the veggies and roll tightly {like a burrito}. Continue with each roll one at a time; softening the paper, adding the veggies, and rolling.
