Tropical Smoothie Bowl (gluten-free & vegan)

This smoothie bowl is like a bowl of sunshine in the morning! | The Refreshanista

Hey friends! Since it’s Celiac Awareness Month, I’m sharing gluten-free recipes all month long for those of you who have Celiac disease, are gluten-intolerant, or just don’t like to eat gluten. Today I’m sharing a breakfast recipe, this super-delicious Tropical Smoothie Bowl. I find that breakfast tends to revolve around some sort of bread so I figured a bread-less breakfast recipe could be handy!

Smoothie bowls are super popular lately, they are all over Instagram! A few months ago I posted a list of recipes from some blogger friends, so if you’re on the smoothie bowl bandwagon you should check it out! I didn’t have any of my own smoothie bowl recipes at the time, I tend to just throw things in the blender without measuring when I make my own smoothies. This time I measured everything so I could share the recipe with you all 🙂

The best part of a smoothie bowl is the toppings. You just can’t go crazy with toppings on a cup of liquidy smoothie like you can with a bowl of thick smoothie. I like to put granola and fruit and sometimes chocolate chips on top of my smoothie bowls. For this one I used a delicious granola from Love Grown Foods that has coconut in it- so perfect for the tropical theme I was going with 🙂 I also added sliced starfruit and bananas. If you’ve never had starfruit before, it’s a really interesting fruit. It has the texture of an apple and kind of a similar taste to a green apple. I like the crispness of the starfruit with the soft bananas, crunchy granola, and velvety smoothie. Definitely not boring!
