I’ve been working on a challenge for August that involves fresh, local produce {stay tuned! the details of the challenge and sign up will be on the blog on Saturday!}. So to get ready I’ve been testing recipes that make local produce the star. This tart is one of my favourites!

I’m lucky to have a farmers market that has just about anything. I picked up tomatoes, goat cheese with green onions, and butter to make this tart. I could hardly wait to taste the goat cheese- and maybe I taste-tested it just a little bit πŸ˜‰Β 

This tart is delicious on its own and would also be a perfect dinner accompanied by a fresh salad. It’s a simple recipe and I think that’s what makes it so tasty! The individual ingredients shine πŸ™‚

My crust skills are somewhat lacking, always have been. I remember getting so frustrated trying to make an apple pie when I was about 12 years old, I just COULD NOT get that pie dough to work for me. I stomped off with teary eyes and gave up. My mom fixed my mess of pie dough and I came back and put the filling in. And of course it was delicious πŸ™‚ But who cares what the pie crust looks like if the filling is bursting with flavour, right??? πŸ˜‰

Tomato Goat Cheese Tart

Ingredients

For the crust:

  • 1 1/8 cup whole wheat flour
  • Β½ cup of cold salted butter cubed
  • Β½ teaspoon of salt
  • ΒΌ cup of ice cold water

For the filling:

  • 1 large tomato or 2 medium tomatoes sliced
  • 3/4 goat cheese I used green onion goat cheese but any kind would work
  • salt and pepper
  • extra virgin olive oil

Instructions

For the crust:

  1. In a large bowl, stir together the flour and salt. Add butter and gently incorporate with your fingertips until you have a coarse meal.
  2. Pour ice water over the mixture. Gently incorporate until the dough comes together. Form a disc, wrap in plastic, and chill for 1 hour.
  3. Preheat oven to 375Roll the dough about 1/8 inch thin, then place in pie dish or tart pan and trim edges to fit the pan.
  4. Prick the dough all over with a fork and bake in the oven for 10 minutes.

For the filling:

  1. Place spoonfuls of 1/2 cup of the goat cheese in the bottom of the crust, trying to create an even layer. Season the tomatoes with a generous amount of salt and pepper then place on top of the goat cheese in an even layer. Drop spoonfuls of the remaining goat cheese on top. Drizzle lightly with olive oil. Bake for 25 minutes or until crust is beginning to brown.
