Sweet Potato Nachos + Guacamole

I made this recipe up one day and my friends and family were such major fans that it became a staple meal in our house. Crunchy sweet potato chips, baked in the oven, covered with cheese and green onions and salsa and homemade guacamole. YUM. Sweet potatoes are very good for you, they have tons of vitamin A and a healthy dose of vitamin B6 and potassium. To keep these nachos on the healthier side, the chips are lightly brushed with coconut oil and oven-baked and the cheese is kept to a sprinkle. Here’s the recipe:

Serves 2

The Nachos:

large or 2 medium sweet potatoes

tablespoon of coconut oil, melted

salt, pepper, and chipotle powder to taste

1/2 cup of shredded cheddar

Preheat the oven to 425F. Begin by washing and peeling the sweet potatoes. Then, using a mandolin, shave thin slices. If you don’t have a mandolin, use a sharp knife and cut slices as thin as possible. Place the slices on baking sheets {you will likely need 2 large baking sheets depending on how large your sweet potatoes are}. Using a basting brush, lightly brush both sides of the slices with melted coconut oil. Sprinkle salt, pepper, and chipotle powder on top. Place in the oven and bake for 10 minutes then check periodically to make sure they don’t get too dark. Thinner slices will cook faster.

When finished baking and the chips are slightly browned, let cool to touch and pile all of the chips onto one baking sheet. Sprinkle with cheddar and place back in the oven until cheese is melted, about 3 minutes.

The Guacamole:

ripe avocados

the juice of 1 lime

1/4 red onion, diced

1 clove of garlic, minced

tablespoon of fresh cilantro, chopped

1/2 jalapeño, seeded and chopped finely

pinch of salt

Lightly mash the avocado, leaving some small pieces. Stir in lime juice, then stir in remaining ingredients.

Putting it together:

Serve nachos in bowls, top with a spoonful of guacamole, chopped green onions, and your favourite salsa.
