Sometimes I just add a splash- or three- to a recipe.

I don’t even drink wine very often. Maybe a few times a year. I had to ask my future mother-in-law {who lives next door and always has a stash of wine 🙂 } for a bottle of red for this recipe because we had none! But I just love cooking with it and of course a glass of the same wine is the perfect beverage pairing.

I love this pasta. And that is an understatement.

The red wine adds depth of flavour to tomato sauce, which is all too often very plain and boring. The mushrooms and onions are a delicious addition, and after simmering in red wine, they are full of flavour!

I started with all fresh ingredients. It’s very easy to use fresh tomatoes rather than canned, and it tastes so much better!

I used a quinoa-rice pasta, so my dish was gluten free. The pasta choice is up to you! Any spaghetti will become instantly delicious when topped with this sauce. Yes, that’s a promise 😉

Spaghetti with Mushroom & Red Wine Roasted Tomato Sauce

Ingredients

  • 6 tomatoes
  • 2 tablespoons of olive oil
  • 4 cloves of garlic minced
  • 1 medium yellow onion chopped
  • 6 large mushrooms sliced
  • 1 1/2 cup of red wine
  • salt and pepper to taste
  • leaves handful of fresh basil coarsely chopped
  • 1 box (454g/1lof pasta cooked according to box instructions

Instructions

  1. Preheat oven to 475Place tomatoes on a foil-lined baking sheet. Drizzle with 1 tablespoon of olive oil. Roast in the oven for 20 minutes. Let cool to the touch, then peel skins off. Blend tomatoes in a blender until puréed.
  2. Heat the remaining tablespoon of olive oil in a large saucepan over medium heat. Add garlic and cook, stirring frequently, for 2 minutes. Add onions and continue to cook for 10 minutes.
  3. Pour in wine and simmer for 10-15 minutes or until you can no longer smell the alcohol. Season with salt and pepper. Add in tomato puree and simmer until thickened, another 10-15 minutes.
  4. Sprinkle in basil and stir. Serve over cooked spaghetti.
