Smokey Sweet Potato Wedges with Zesty Avocado Dip

Raise ya hand if you love sweet potatoes!!! I know I do! I especially love the way their sweetness pairs so perfectly with spice and lime- and pretty much everything else πŸ˜‰ Not only are they delicious, the sweet potato is super nutritious and packed with vitamins. So eat as many sweet potato wedges as you want!

They have tons of flavour and are perfect for dipping in zesty, spicy, and creamy dips. They do have a softer, less starchy texture so you have to broil them at the end- then you get wedges that are soft on the inside and crispy on the outside πŸ™‚

Speaking of veggies I’m addicted to, AVOCADOS. So delicious. To go with these smokey, spicy wedges, I made a creamy avocado-lime dip. The creaminess cuts the spice and the lime and cilantro add fresh flavour.

If you don’t like cilantro you can leave it out or dip these fries in a chipotle mayo sauce. Vegenaise chipotle mayo is seriously delicious and vegan πŸ™‚ I haven’t tried it with these fries specifically but it’s a favourite.I love these sweet potato fries! These sweet potato wedges are perfect for Mexican Night as a delicious and healthy side dish. When I go to my favourite Mexican restaurant I get veggie fajitas and their sweet potato fries. Yum. Now I’ve perfected my own sweet potato fries for Mexican Night at home! My fiancΓ© and I love having taco night- it’s fast, easy, and delicious πŸ™‚ adding these wedges will make it even more delicious!

Smokey Sweet Potato Wedges with Zesty Avocado Dip

Ingredients

For the wedges:

  • 1.5 lb sweet potatoes {I used mini sweet potatoes so I did not peel them if you use regular size you may want to peel them}
  • 2 tablespoons of olive oil
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of chipotle powder
  • generous amount of freshly cracked pepper

For the dip:

  • 1 avocado
  • juice of 1 lime
  • 1 teaspoon of olive oil
  • 1/4 teaspoon of sea salt
  • leaves small handful of fresh cilantro roughly chopped

Instructions

  1. Preheat the oven to 450Meanwhile, cut your sweet potatoes into fairly-equal sized wedges. In a large bowl, toss sweet potatoes with olive oil, salt, chipotle, and pepper until each wedge is coated.
  2. Line a baking sheet with parchment paper or aluminum foil. Place wedges in one layer on the baking sheet.
  3. Bake for 30 minutes. Switch oven to "HI" broil for another 2-5 minutes for crispiness. Check them after each minute of broiling to get the perfect crispiness and avoid burning them.
  4. For the dip, mash the avocado and stir in the other ingredients OR place all ingredients in a blender and blend until smooth.
  5. Serve right away.

  1. I’m totally addicted to sweet potato fries. I’ll admit, I’ve never made wedges before however. Love the Avocado dip on the side. Double YUM. Can’t wait to try them out and see what the family thinks.

  2. I love chipotle (powder, in adobo, whatever!). I bet the sweet potato flavour really plays well against it. Gives me some ideas! Oh, and pairing them with guacamole sounds absolutely perfect. Thanks for sharing!

  3. I had not heard of sweet potato fries before I moved to Canada and now I am absolutely addicted to them! They are just so good. I love that you bake them in the oven and don’t toss them in a deep-fat-frier, so much healthier but how do you get them nice and crisp instead of a little soggy? That’s the problem I always have with making potato fries at home!
