Ok you guys, this one is next-level delicious! After making my 3-Ingredient Dairy-Free Chocolate Raspberry CupsΒ for Valentine’s Day, I decided I had to try more variations on chocolatey cups filled with deliciousness! This recipe hits the mark for sure πŸ™‚ These almond butter cups areΒ rich chocolate with a slight honey flavour, filled with all-natural almond butter, and topped with a sprinkle of flaky sea salt- absolute perfection!Β I love the sweet & salty combination and how easy these are to make.

I started by making my own chocolate. It’s surprisingly easy to do and results in a rich, smooth chocolate that’s completely natural! It’s just coconut oil, honey, and cacao powder. When it cools, the coconut oil allows it to firm up but melt in your mouth as soon as you take a bite. Delicious.

Make sure you buy almond butter that only lists almonds in the ingredients. Oil and sugar are not necessary. Plus, some almond butters contain palm oil which is destroying rainforest and orang-utan habitat. So opting for the simple just-almonds almond butter is not only healthier but it also avoids purchasing an unsustainable product πŸ™‚

Salted Honey Almond Butter Cups

Ingredients

  • 2/3 cup of coconut oil
  • 1/3 cup of honey
  • 2/3 cup of cacao or cocoa powder
  • 1/2 cup of pure almond butter
  • flaky sea salt

Instructions

  1. Melt coconut oil, then whisk in honey until combined. Whisk in cacao or cocoa powder until no clumps remain.
  2. Place 25 mini cupcake liners on a tray or in mini muffin pans. Fill about 1/3 of the way with chocolate, then freeze for 10 minutes.
  3. Add about 1 teaspoon of almond butter to each cup. Top with chocolate but do not fill completely to the top, leaving a tiny bit of room makes it easier to pull off the paper later. Sprinkle with sea salt and return to the freezer for 5 more minutes.
  4. Enjoy! Keep in the fridge.
