I love love love fajitas. My family had Fajita Night all the time growing up. It was one of my favourite meals: chicken, minimal veggies, tons of cheese, an overload of sour cream. That was how I liked my fajitas.

Although my dietary habits have changed A LOT {as in no more mountains of cheese and chicken}, I still have a love of fajitas.

More recently, I enjoy going to the Mexican restaurant down the street {which is the only Mexican restaurant in the city- oh how I miss the USA} and sharing the fajitas with my fiancé. While their Vegetarian Fajitas are pretty yummy, the veggies are delivered sizzling hot in a pool of oil and the meal is around $25 for the “Meal For One”!  So I have found myself leaving the restaurant feeling icky and wishing I would have spent my money better.

Fajitas are actually a very simple thing to cook yourself. Cooked veggies plus your favourite toppings, you can’t go wrong!

This fajita recipe is super delicious. A little spicy, majorly flavourful, and very healthy 🙂


Roasted Vegetable Fajitas

  • 1 head of broccoli chopped into bite-sized florets
  • 1 zucchini sliced
  • 1 bell pepper chopped
  • 1/2 cup of sliced carrots
  • 8 oz of mushrooms chopped
  • 4 tablespoons of olive oil
  • 2 teaspoons of cumin
  • a dash of chipotle powder
  • salt and pepper to taste
  • the juice of 1/2 a lime
  • 2 avocados sliced
  • 6 medium sized whole wheat tortillas
  • optional toppings: grated cheddar cheese, salsa, sour cream {or I like to use greek yogurt}


  1. Preheat the oven to 400On a baking sheet lined with aluminum foil, distribute veggies in an even layer.
  2. Drizzle with olive oil and sprinkle cumin, chipotle powder, and salt and pepper. Toss veggies, making sure to coat them evenly.
  3. Roast in the oven for about 25-30 minutes or until beginning to brown.
  4. Once veggies come out of the oven, squeeze the lime juice over them.
  5. Wrap the stack of tortillas in foil and place in the still-warm oven for 5 minutes.
  6. To assemble, lay tortilla flat. Then add roasted veggies, then avocado slices, and then top with your favourite toppings and roll.
  7. Enjoy!
