Who doesn’t love hot chocolate?! I’ve always loved my mom’s hot cocoa, rich and chocolatey, perfect for warming up after playing in the snow. There’s nothing better than warming chilly fingers with a mug of delicious chocolatey goodness. It’s just the perfect winter beverage!

I’ve never been a fan of the watery hot cocoa, it just tastes like water to me! If it’s made with hot water I don’t even want it. Call me a snob, I like to think of myself more as a hot chocolate connoisseur πŸ˜‰ I like my hot chocolate rich and creamy with intense chocolate flavour.

And this hot chocolate is all of that and more πŸ™‚ the coconut milk makes it smoothΒ and creamy and gives a subtle coconut taste. I used real chocolate instead of cocoa powder to give a really rich chocolatey taste. A pinch of cinnamon makes this hot chocolate deliciously warming.

Obviously I’m a fan πŸ˜‰

Yummm. | The RefreshanistaI made a pot of this and it was quickly slurped up by my younger siblings. They loved the rich chocolatey taste and the maple whipped cream I topped their mugs with. I originally made the whipped cream for my Gingerbread Cake and thought it would be delicious to top coconut milk hot chocolate- turns out I was right! Although I’m pretty sure it would be delicious on pretty much anything πŸ˜‰

Coconut Milk Hot Chocolate

Ingredients

  • 4 cups of coconut milk
  • 4 oz of bittersweet chocolate chopped
  • 1 cup of semi-sweet chocolate chips
  • 1 teaspoon of pure vanilla extract
  • 1/2 teaspoon of cinnamon
  • tiny pinch of sea salt

Instructions

  1. Heat coconut milk in a medium size pot over the stove. Once it starts to simmer, lower the heat.
  2. Add in both chocolates and whisk until fully melted and incorporated.
  3. Remove from the heat and whisk in vanilla, cinnamon, and sea salt.
