I love all kinds of veggie burgers- they’re all so different! There’s bean burgers, grain burgers, tofu burgers, mushroom burgers, the list goes on. Way more fun than hamburgers ๐Ÿ˜‰

My favourite kind of veggie burger is a mushroom burger {except this one time I had grain and bean burger at a restaurant on a ski hill in Telluride, Colorado and loved it!}. I like them because I find the other kinds of veggie burgers can be dry sometimes. Not mushroom burgers- they’re juicy and delicious!

This recipe calls for liquid smoke. You can omit it if you don’t have any but trust me it’s amazing. I have liquid hickory smoke and it is crazy good. I bought it when I made a vegan smoked gouda fromย a cookbook calledย Artisan Vegan Cheese. The gouda was so delicious even my hardcore meatlover family members loved it!

I paired these burgers with herbed goat cheese- the creamy spread goes perfectly with the smoky mushrooms. You can find logs of herbed goat cheese in the grocery store or just mix in some chopped fresh herbs with plain goat cheese.

Portobello Mushroom Burgers

Ingredients

  • 4 portobello mushrooms stems removed
  • 1/2 cup of balsamic vinegar
  • 1/4 cup of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 10 drops of liquid smoke (optional, adds a great smoky flavour)
  • salt and pepper to taste I like a LOT
  • Herbed goat cheese

Instructions

  1. Place mushrooms in a large freezer-size Ziploc bag.
  2. Whisk together vinegar, olive oil, garlic and onion powder, liquid smoke, and salt and pepper.
  3. Pour the marinade into the bag with the mushrooms and seal.
  4. Gently shake the bag to distribute the marinade and coat the mushrooms on all sides.
  5. Lay bag flat and push mushrooms around so that they lay in a single layer. Let sit for 1 hour.
  6. Remove mushrooms from marinade and grill for 10 minutes on each side on medium heat.
  7. Toast burger buns and spread the herbed goat cheese on one side. Add your favourite burger toppings and enjoy!
