I made this delicious galette with wonderful local ingredients 🙂 The Maritimes have an abundance of tart, juicy blueberries in the summertime. Lucky me! I also quite enjoy the fact that maple syrup is flowing from like half the trees around here! There’s nothing like real maple syrup- deep golden sticky deliciousness. Blueberries plus maple- it’s like Canada in a pie crust!

A galette is the perfect pastry to showcase fresh berries. The flaky, buttery crust frames the juicy, maple glazed blueberries for a super yummy rustic dessert or breakfast. Top it with whipped cream or ice cream and you’re in heaven 😉

Maple Blueberry Galette

Ingredients

Crust:

  • 1 1/4 cup of all purpose flour *or* 1 1/8 cup of whole wheat flour
  • 1/2 cold butter cubed
  • 1/4 cup ice water

Filling:

  • 2 1/2 cups fresh blueberries
  • 1/4 cup maple syrup
  • 2 tablespoons corn starch
  • dash of cinnamon
  • 1 teaspoon of lemon juice
  • + 1 beaten egg for wash
  • tablespoons + 2 of butter

Instructions

Crust:

  1. Add cubes of butter to flour and mix with fingertips until mixture becomes a coarse meal, trying not to warm the butter. Pour ice water over mixture then mix gently with your hands until the dough comes together. Form a disc, wrap in plastic, and chill in the fridge for at least an hour.
  2. Roll out dough on a floured surface into a large circle, about 12" in diameter or as large as you can without making holes in the dough. Seal any cracks by pressing the dough together with your fingers.
  3. Place dough on a lightly greased pie plate or baking sheet with parchment paper. Preheat oven to 375F.

Filling:

  1. Stir together blueberries, maple syrup, cornstarch, cinnamon, and lemon juice.
  2. Spoon mixture into the centre of the dough leaving a 2 inch border. Fold edges of the dough toward the centre. Pinch seams as best as you can to prevent the filling from leaking {don't worry too much if it does leak a bit though!}. Brush crust with beaten egg. Dot the blueberries with the 2 tablespoons of butter.
  3. Bake for 40 minutes or until crust is golden brown. Let cool for 10 minutes before serving. Serve with a drizzle of maple syrup and whipped cream or ice cream if you desire

  1. Just got back from the Lac saint jean Saguenay région in Québec. They have the best wild blueberries ever but such a short window of opportunity to get them from the market. This galette is a perfect way to serve them.
    I also live a five minute drive from le cabane sucre Constantin, which has my favourite maple syrup. I’m so making this recipe!
