Raise your hand if you love muffins! I’m a huge fan, they’re fluffy with a crunchy top and packed with any kind of flavour combo you can think of. But they are not always a healthy option! I was surprised to find out how many calories and how much fat was in a Tim Hortons muffin. The key is to replace the refined, innutritious ingredients with whole, healthy ingredients like whole grains, good-for-you fats, and unrefined sugar. These Greek yogurt muffins fit the bill perfectly!

Muffins straight from the oven! One of my favourite breakfasts 🙂 I remember making muffins with my mom from her favourite cookbook- The Muffin Lady. We made all kinds of delicious, fluffy muffins with crunchy sugary tops. That was before I got into making healthy, nutritious food. Now I still love to make muffins, just with healthier ingredients!

Lemon and blueberry are a classic flavour combination. Nice and fresh 🙂 These Greek yogurt muffins go perfectly with a cup of coffee or tea for breakfast. They’re also great for snacking on! Pack one in your lunchbox for work or school- the whole grains plus the protein from the Greek yogurt will help tide you over until lunchtime!

Lemon Blueberry Greek Yogurt Muffins

Ingredients

  • 1 3/4 cups of whole wheat flour
  • 1 tablespoon of baking powder
  • 3/4 cup of coconut palm sugar
  • 1/2 teaspoon of salt
  • 1 egg
  • 1/4 cup of coconut oil melted
  • 1 cup of lemon Greek yogurt {I use 0% "fruit on the bottom" if yours is just lemon flavoured, add 1 tablespoon of lemon zest}
  • 1 tablespoon of pure vanilla extract
  • 2 tablespoons of lemon juice
  • 1 cup of fresh blueberries

Instructions

  1. Preheat your oven to 475F and line a muffin tray with paper liners.
  2. Sift together flour, baking powder, coconut sugar, and salt in a large bowl.
  3. In a medium sized bowl, beat the egg. Then mix in coconut oil, Greek yogurt, vanilla, and lemon juice.
  4. Add wet ingredients to the dry ingredients and mix until just barely combined.
  5. Add in blueberries and fold very gently to distribute throughout the batter.
  6. Bake in the oven at 475F for 5 minutes, then lower the temperature to 375F and bake for another 15-20 minutes.
