This bean salad goes so fast in our house. In fact it’s already gone as I’m writing this post!

It’s so fresh and full of flavour and packed with protein. Perfect for lunch or a summer barbecue side dish. Honestly, I eat it directly from the bowl.

This bean salad is super easy to make too! You can whip it up in no time at all- good for when you forgot that you were supposed to bring a dish to the potluck 😉

If you have a grill, by all means grill the corn 🙂 I bet it would be even better. I am no barbecue expert so I “grill” my corn in the oven.

Grilled Corn & Avocado Bean Salad

Ingredients

  • 4 ears of corn shucked
  • 1/2 cup of extra virgin olive oil plus 1 tablespoon for corn
  • 1/4 cup of apple cider vinegar
  • the juice of 1 lime
  • 1 teaspoon of honey
  • 1 teaspoon of dijon mustard
  • salt and pepper to taste
  • 1 can (540mof black beans drained and rinsed
  • 1 can (540mof white beans drained and rinsed
  • 2 avocados cubed
  • 1/2 cup of cilantro chopped

Instructions

  1. Preheat oven to 500Place corn on a sheet of tin foil. Brush the ears of corn with the tablespoon of olive oil then sprinkle with salt and pepper. Place in the oven for 30 minutes, rolling the corn over every 10 minutes so they brown evenly.
  2. In a large bowl, whisk together the olive oil, apple cider vinegar, lime juice, honey, mustard, and salt and pepper.
  3. Add both beans to the bowl. Then cut the corn off the cob and add to the bowl. Add avocado pieces and cilantro. Toss to evenly coat beans, avocado, and corn with the sauce.
  4. Chill 1 hour then serve.

Recipe Notes

if you are making this salad ahead of time, leave out avocado until just before serving to avoid browning.

What a whirlwind of a week! I’m so happy it’s Saturday. The forecast is rainy for today so I’ll be curled up with a big mug of dark roast coffee and a good book but tomorrow we are road-tripping!   1. YUM! We had something very similar for dinner last night, and I am convinced that it’s one of the best dinners ever! It’s so simple, yet so incredibly flavorful and delicious! I love the addition of mustard and honey here – I’ll have to try that next 🙂
