Hey friends! It’s National Noodle Month (yayyyy!) so I’ll be posting a new noodle recipe every Wednesday this month. You can check out last week’s noodle-goodness here 🙂 I went Greek with today’s recipe because I adoooore Greek food. I love to go to our local Mediterranean restaurant with my husband and enjoy warm pitas, garlic sauce, tzatziki, hummus, and veggie kabobs- YUM. Pasta salad is not typically healthy but this recipe is made with homemade tzatziki and lots of veggies! Yay for healthy pasta salad!

I decided to forego the store-bought tzatziki because I discovered it’s not all Greek yogurt, they put sour cream in it! Not authentic and not healthy. It’s surprisingly easy to make your own and it tastes wayyy better than the packaged kind from the grocery store. You can also make it with fat-free Greek yogurt, like I did, and then you have a creamy and delicious fat-free sauce! Awesome!

I love how this pasta salad tastes like an indulgent dish but it’s actually really healthy. It’s nearly fat-free and has a good amount of protein from the Greek yogurt, plus it’s packed with veggies! Opt for whole wheat penne if you want an even healthier dish. You could definitely trick some people with this pasta salad if you bring it to a potluck or party, no one will know they’re eating something healthy! And you won’t have to stick to the veggie platter to avoid the not-so-healthy options 🙂

Greek Tzatziki Pasta Salad

Ingredients

Tzatziki

  • 1/2 an English cucumber seeds removed then grated
  • 1 cup of plain Greek yogurt
  • juice of 1/2 a lemon
  • 1 tablespoon of chopped fresh dill
  • sea salt to taste

Pasta salad

  • 500 g of penne pasta cooked according to box directions
  • 1/2 an English cucumber sliced
  • 2 cups of grape tomatoes cut into halves
  • 1 cup of sliced black olives
  • 1 green bell pepper chopped
  • 1/2 a red onion finely chopped
  • cup Optional: 1/2 of crumbled feta

Instructions

  1. In a small bowl, stir all of the tzatziki ingredients together. Set aside.
  2. After cooking your pasta, you can chop all of your veggies while you let the pasta cool in a large bowl.
  3. Add veggies to your pasta and feta if using and mix. Then add your tzatziki and mix well.
  4. Tastes best after being refrigerated until cold, about half an hour.
