It’s Celiac Awareness Month! Did you know that? I’m not on a gluten-free diet but I love to make recipes that are able to be enjoyed by those that are 🙂 so this month I’m posting a new gluten-free recipe every Monday! I’m sharing a mix of sweet and savoury recipes so keep an eye on my blog for some Celiac-friendly deliciousness! Last week I posted an amazing Gluten-Free Strawberry Skillet Cake- check that out here. Today I’m sharing a Greek-inspired quinoa salad, full of veggies and flavour 🙂 

I’m kind of obsessed with Greek food. I love all of the flavours and the fresh veggies. We have a little Mediterranean restaurant near us that my husband and I love to go to. We share a dipping platter with warm pita bread, hummus, tzatziki, and garlic sauce and then I get veggie kabobs with beet salad. Soooo tasty. I made my own tzatziki a little while back, so much healthier and tastier! Check it out here if you love tzatziki 🙂

I went with quinoa for this salad, it’s naturally gluten-free and packed with protein, fibre, vitamins, and minerals 🙂 Add in tons of veggies, some light feta cheese, and a homemade Greek dressing and you’ve got yourself a healthy meal! If you are allergic to gluten, make sure to check the package to make sure it is pure quinoa that has not come into contact with any wheat.

You could pack this quinoa salad in mason jars to bring to work or school for lunch. It’ll keep you full and energized to get through the rest of your day. It also makes a great dish to bring to a party or potluck, it’s not time-consuming and it can be made ahead of time 🙂

Gluten-Free Greek Quinoa Salad

Ingredients

Salad

  • 1 box of quinoa cooked according to package directions
  • 1/2 an English cucumber chopped
  • 2 cups of grape tomatoes sliced into halves
  • 1/2 cup of sliced black olives
  • 1/2 a red onion finely chopped
  • 3/4 cup of crumbled light feta

Dressing

  • 1/2 cup of extra virgin olive oil
  • 1/4 cup of red wine vinegar
  • 1 teaspoon of dried oregano
  • sea salt and freshly cracked black pepper to taste

Instructions

  1. After cooking your quinoa, chop your veggies while the quinoa cools in a large bowl.
  2. Then, whisk together your dressing ingredients in a small bowl.
  3. Add veggies, feta, and dressing to the quinoa and mix well.
  4. Tastes best after refrigerating until cold, about half an hour.
