Yum yum yum! I loooove fresh peaches! In the summertime I just eat them as is, with a napkin for the juices of course! I decided to have a little fun with peaches this time and paired them goat cheese, balsamic drizzle, and fresh baby spinach- all between two slices of bread. And let me tell you, it was delicious! This grilled cheese is the perfect gourmet sandwich to make lunchtime the best time of day ๐Ÿ˜‰

Everyone loves grilled cheese, but a slice of gloopy processed cheese between two pieces of white bread can get boring fast. Not to mention it lacks flavour and nutrients. The best way to up the deliciousness of a grilled cheese is toย switch the cheese and add vegetables and fruit. Apples go well with a sharp cheddar, roasted veggies go well with any kind of cheese, etc.

Goat cheese has a slightly tangy and mild flavour, making it perfect for pairing with fruit- especially fresh, juicy peaches! And theย sweet-tart balsamic drizzle adds an extra level of flavour. This flavour combination is anything but boring! Pair your sandwich with a side salad with a balsamic dressing and you’ve got a fancy lunch with minimal effort and time required ๐Ÿ™‚

Goat Cheese & Peach Balsamic Grilled Cheese Sandwich

Ingredients

  • 1/4 cup of balsamic vinegar
  • 4 slices of good bread I like to use Italian
  • 1 cup of baby spinach
  • 1 slices peach cut into
  • 4 tablespoons of goat cheese

Instructions

  1. In a small pot, heat the balsamic vinegar until it reaches a simmer, then continue simmering for about 5-10 minutes. When the balsamic vinegar is reduced, you should have about half the amount of liquid remaining and the vinegar should coat your spoon. Set aside.
  2. To assemble each sandwich: take a slice of bread, pile on 1/2 cup of spinach, add half of the peach slices, crumble on 2 tablespoons of goat cheese, and drizzle with balsamic reduction. Top with a slice of bread and grill in a panini press or in a pan over the stove until golden brown

  1. I love peaches too. I made a whipped feta and goat cheese dip, with balsamic and purple basil. My secret and spoiler was fresh cracked black pepper on top.
    I loved it so much I grilled some peaches the next day and used them in a slaw with a sweet onion dressing.
    I can’t stop the ideas from flowing. I love your recipe, I’ll give it a go on Sunday as we are having company and I love sharing a new recipe.
