Woohoo! I’m excited about this one! I think I say that about all of the recipes I share, but seriously this one’s a keeper 😉 One of my favourite things to eat is a veggie samosa- deep-fried pastry stuffed with a spicy potato mixture, dipped in sticky sweet chutney. While delicious, they aren’t very healthy- given that they are fried, and they also give me heartburn from the grease and spice. Not fun! So I made a healthy wrap version that’s not fried and a little less spicy so the other flavours can shine through. Delicious.

You can also freeze and reheat these wraps. Perfect for making on a Sunday and having for lunch all week! Don’t forget to pack some chutney 😉 it just makes it even better- my favourites are peach or mango chutney.

Veggie Samosa Wraps

Ingredients

  • 5 white potatoes
  • 1/2 cup of frozen peas
  • 1 white onion
  • 2 cloves of garlic
  • piece thumb-sized of fresh ginger
  • 1 tablespoon of olive or coconut oil
  • 1 teaspoon of cumin seeds
  • 1 teaspoon heaping of garam masala
  • juice of 1/2 a lemon
  • large handful of fresh cilantro stems removed and chopped
  • teaspoon salt to taste approximately 1
  • 6 whole wheat tortillas
  • chutney for dipping

Instructions

  1. Set a pot of salted water on high heat to boil. While you are waiting, peel and chop your potatoes into 1-inch pieces. Add your potatoes to the water once it reaches a boil and cook for 10-15 minutes. During the last minute, add frozen peas, then drain.
  2. While your potatoes are cooking, finely chop the onion, garlic, and ginger.
  3. In a large pan over medium heat, heat your oil. Add onions and cumin seeds and cook until soft but not browned, about 8 minutes. Add garlic, ginger, and garam masala and cook for another minute or two.
  4. Transfer onion mix and potato mix to a large bowl. Coarsely mash with a potato masher or a large fork, you want to leave some bite-sized pieces of vegetables. Add lemon juice and cilantro and mix well. Add salt to taste.
  5. Place filling in the centre of each tortilla and roll up like a burrito (shown below). Grill in a panini press or heat in the oven until crispy. Serve with chutney for dipping.

    1. Hey Veronica 🙂 I haven’t tried using cumin powder instead of the seeds but if you do try that, use much less because the powder packs a stronger flavour. Hope that helps!
