Nothing says fall like caramel apples, am I right?
I know I’ve been saying this a lot but FOR REAL I’m going to get back into the blogging groove this time. Ever since I had my baby 5 months ago, my blogging has been a bit sporadic to say the least. I feel like I have no time to do anything. The days seem to be over before they begin! I nurse, play, babywear, and repeat and before I know it it’s time to put my little cutie to bed. If she would nap on her own I think I’d be able to get a little more done but my sweet girl likes to be on her mama when she naps. I can’t blame her, I quite enjoy the snuggles myself! Maybe one day I’ll have naptimes to myself 🙂
So for now I’m making only super quick recipes that I can get done in 30 minutes or less while Miss Evie plays on her play mat. The hard thing is trying to make recipes even quicker than that so I can have time to photograph it for the blog! Hence the radio silence over here .
Enter these caramel apple slices! These delicious beauties take about 15 minutes to whip up and they’re a healthy treat that’s perfect for fall. The caramel sauce is non-dairy and gets its yummy caramel flavour from medjool dates. It’s even easier to make than traditional caramel sauce!
Once you’ve got your caramel sauce all blended up, you’ll drizzle it on apple slices along with dark chocolate and a sprinkling of coconut or sea salt or both. Yum! I really love the coconut and chocolate flavour pairing and of course salt on sweet is classic. You can eat these slices right away, fridge them for later, or freeze them for a tasty frozen treat when you’re craving something sweet!
Dairy-free Caramel Apple Slices
- 8 medjool dates pitted
- 3/4 cup of water
- 1 teaspoon of coconut oil
- seeds of 1 vanilla bean
- pinch of sea salt
- 2 apples cored then sliced thinly
- 1 bar of dark chocolate melted
- 1/3 cup of shredded unsweetened coconut
- 1/2 teaspoon of sea salt
Blend together all caramel ingredients until smooth.
Place apple slices on wax paper in a single layer.
Drizzle on caramel sauce and melted chocolate. Then, sprinkle coconut on half the slices and sea salt on the rest. You can also do all coconut or all sea salt if you want. You can also experiment with all kinds of toppings like chopped nuts, graham cracker crumbs, etc.
Store the apple slices in the fridge or in the freezer for a yummy frozen treat.
