Want a super-quick recipe that involves very little cooking? I’ve got ya covered! That’s the beauty of couscous, you just dump it into boiling water and leave it for a few minutes and it’s done! No draining necessary 🙂 Perfect for those days that are so hot you can’t stand the thought of slaving over the hot stove. This couscous salad only takes 20 minutes and you can eat it warm or cold. It’s a delicious side dish or main meal- up to you! I can totally picture this as a side dish for a veggie wrap 🙂 

I really love all the veggies in this couscous salad. They’re crisp, juicy, and creamy- a perfect variety of textures and flavours! The veggies  with the fluffy couscous and bright basil lemon dressing make for a delicious dish. It’s light yet very filling, perfect for lunch to keep you full until dinner without making you feel sluggish.

This dish would also be great for serving a get-together. It’s quick to make and you can simply refrigerate it until ready to serve. No reheating required 🙂

Couscous Salad with Lemon Basil Dressing

Ingredients

  • 2 cups of whole wheat couscous
  • 1/2 an English cucumber chopped
  • 1 tomato watery seeds removed, chopped
  • 1 avocado cut into cubes

For the dressing:

  • 1/2 cup of extra virgin olive oil
  • juice of 1/2 a lemon
  • 3 large leaves of fresh basil chopped
  • sea salt and freshly cracked black pepper to taste

Instructions

  1. Cook couscous according to package instructions and set aside to cool. Meanwhile, chop all your veggies.
  2. Mix together dressing ingredients then drizzle over couscous. Toss to combine. Add veggies and toss again.
  3. Serve warm or cold.
