Hey friends! It’s National Noodle Month (yayyyy!) so I’ll be posting a new noodle recipe every Wednesday this month. You can check out last week’s noodle-goodness here 🙂 I went Greek with today’s recipe because I adoooore Greek food. I love to go to our local Mediterranean restaurant with my husband and enjoy warm pitas, garlic sauce, tzatziki, hummus, and veggie kabobs- YUM. Pasta salad is not typically healthy but this recipe is made with homemade tzatziki and lots of veggies! Yay for healthy pasta salad!
Raise ya hand if you love sweet potatoes!!! I know I do! I especially love the way their sweetness pairs so perfectly with spice and lime- and pretty much everything else 😉 Not only are they delicious, the sweet potato is super nutritious and packed with vitamins. So eat as many sweet potato wedges as you want!
