Who doesn’t love a good pizza?! I’m a big fan, myself. But I have to say, nothing beats a good homemade pizza! It’s less greasy and tastes fresh and delicious 🙂 I remember my dad making homemade pizza for us with yeast-risen crust, baked on a pizza stone- YUM! I like to make my own crust too, but sometimes you just need a quick pizza 😉 so for this caprese pizza I used naan bread. It’s perfect for using as a pizza crust because it’s flat but nice and thick so it can hold up your toppings. 

This caprese pizza is perfect for a weeknight meal. It tastes fancy but it’s ready in less than half an hour with minimal effort- that’s quicker than most pizza delivery places! Make sure you choose fresh mozza, the kind that comes packaged in water. It’s soft and mild and suuuuuper stretchy when melted- perfect for pizza! I like it much better than the hard, salty “pizza” mozzarella. It also doesn’t require shredding 😉

Don’t skip the balsamic reduction, it’s surprisingly easy to make and it really makes this pizza delicious! It’s tangy and slightly sweet and really enhances the flavours of fresh basil and tomato. So yummy! You will impress your friends and family with this one 😉

Caprese Pizza on Naan Bread

Ingredients

  • 1/4 cup of balsamic vinegar
  • 2 pieces of naan bread mine were 125g each and low fat+low sodium
  • 1 small can of pizza sauce
  • 250 g of fresh mozzarella cut into slices
  • leaves handful of fresh basil chopped
  • 1/2 of a tomato sliced
  • olive oil

Instructions

  1. Preheat the oven to 375Meanwhile, heat your balsamic vinegar in a small pot to a simmer. Continue simmering for 5-10 minutes until the liquid has reduced by half and the vinegar coats your spoon. Set aside.
  2. Place your naan bread on a baking sheet lined with parchment paper. Scoop sauce into the middle of each piece and spread to the edges using the back of a spoon. Place a few slices of mozzarella and tomato on each naan bread. Sprinkle fresh basil on top. Drizzle a small amount of olive oil over top.
  3. Bake for 10-15 minutes or until cheese has melted and the naan bread starts to get golden and crispy.
  4. Drizzle with your balsamic reduction, slice, and serve.
