Happy Grilled Cheese Month! Did you know that was a thing? I didn’t but I will gladly celebrate 😉 I mean how can you not love grilled cheese? It’s a classic. Melty cheese between two slices of toasty bread- perfection. As much as I loved mine made with just processed cheese and two slices of buttered bread when I was a kid, I prefer something a little more interesting with more veggies and more flavour 🙂 Which leads me to today’s recipe- a caprese grilled cheese! Fresh, stretchy mozzarella, fragrant basil, juicy tomato, and a drizzle of balsamic reduction. Say goodbye to boring grilled cheese and celebrate Grilled Cheese Month with this delicious Caprese Grilled Cheese!

If you haven’t tried balsamic reduction- you’re seriously missing out! It’s surprisingly easy to make and it adds delicious flavour to whatever it’s drizzled on. It’s tangy and slightly sweet and has a syrupy consistency, I love to drizzle it on fresh mozza and tomatoes.

What makes this caprese grilled cheese so delicious is the fresh mozza. You don’t want to use the hard, “pizza” mozzarella, it’s just not the same! Look for the kind that is packaged in water- that’s the real deal. It’s soft and mild and crazy-stretchy when melted so it’s perfect for a grilled cheese sandwich 🙂

Caprese Grilled Cheese

Cook Time 10 minutes

Ingredients

  • 1/4 cup of balsamic vinegar
  • 2 slices of good quality bread I like to use italian bread
  • 4 slices small of fresh mozzarella
  • 2 slices of tomato
  • 2 leaves of fresh basil

Instructions

  1. In a small pot, heat the balsamic vinegar until it reaches a simmer, then continue simmering for about 5-10 minutes. When the balsamic vinegar is reduced, you should have about half the amount of liquid remaining and the vinegar should coat your spoon. Set aside.
  2. Layer your sandwich: slice of bread, 2 slices of mozzarella, 2 slices of tomato, 2 basil leaves, a generous drizzle of your balsamic reduction, 2 slices of mozzarella, slice of bread.
  3. Heat until bread is golden brown and cheese is melted in a panini press or in a pan on the stove.
