If you don’t love breakfast sandwiches, we can’t be friends. Just kidding! But seriously though, who doesn’t love a good breakfast sandwich?! I’m not talking Egg McMuffin with weird “eggs” and goopy processed cheese. No way. I’m talking fresh veggies and a perfectly cooked egg on some delicious gourmet bread. It’s just as quick as waiting in line at a drive-thru and only about $2 to make!

I may have a sandwich addiction, is there a group meeting for that? I just love how versatile they are, you can fill them with any veggies you want, delicious spreads, creamy avocado slices, different kinds of protein. So good. They also require minimal time and effort, you can have a delicious meal in about 10 minutes. And they don’t have to be unhealthy, focus on fresh veggies and wholesome proteins and you’ve got yourself a nutritious sandwich 🙂

I firmly believe avocado makes any sandwich 10x more delicious. And healthier too! They’re creamy so they make a good substitute for cheese or spreads, essentially replacing “bad” fat with “good” fat.

I poached my eggs for this breakfast sandwich, I like the soft texture better compared to fried eggs and they also don’t require any oil for cooking. However, the way you cook the egg is up to you! Breakfast Panini

  • 2 eggs
  • 1 teaspoon of vinegar
  • 2 in mini loaves of italian bread cut half horizontally I used rosemary focaccia triangles
  • 2 teaspoons of basil paste or finely chopped fresh basil mixed with a bit of olive oil
  • 1 avocado sliced
  • 1 tomato thinly sliced
  • large handful of baby spinach
  • sea salt & freshly cracked black pepper


  1. To poach your eggs, heat a small pot of water until it starts to simmer (you don't want it to boil). Once it's simmering, add a splash of vinegar. Crack one egg into a small bowl or a ramekin.
  2. Using a spoon, stir your water in one direction to create a whirlpool in the centre. Carefully slide your egg into the whirlpool and let it cook for 3 minutes for a soft yolk, 5 minutes for a medium yolk, and about 8 minutes for a hard yolk. Remove from water with a slotted spoon and place on paper towel.
  3. Repeat with the second egg. Note: you can also simply fry your eggs if you want!
  4. Take your bread and spread the basil paste on the inner side of the bottom halves. Place basil side down on a panini press or a hot pan and remove when slightly golden brown. Then, take the top halves and brown them.
  5. To assemble, place avocado slices on the bottom halves of your bread. Layer with baby spinach and tomato slices, then top with an egg and season with salt and pepper. Place remaining bread halves on top.
