I LOOOOOVE avocados. Seriously, it’s love. I love every form of the super-nutritious fruit from guacamole to chocolatey avocado truffles.

It’s funny to think back to when I was about 7 years old, I can still vividly remember my mom preparing the toppings for fajita night. That green stuff in the food processor.

“What is THAT?!”

“Guacamole!”

I vowed in my head to avoid the green thing called guacamole for life.

Fastforward to a few years ago when avocados became much more than the ingredient for guacamole, they were starting to receive praise as a health food.

I tried guacamole. I fell in love. I’ve been obsessed ever since.

Although I quite enjoy plain ol’ mashed avocado on toast with a little salt and pepper, my classic breakfast needed a little gourmet makeover. So here are some new ways to enjoy your avocados 🙂

PS: you could totally turn the first two recipes into an appetizer by using slices of baguette!

Strawberry and Goat Cheese Avocado Toast

Ingredients

  • 1 slice of whole grain bread {or your favourite bread} toasted
  • 2 tablespoons of goat cheese
  • 1/2 slices of an avocado cut into
  • 2 strawberries sliced

Instructions

  1. Spread the goat cheese onto the toast.
  2. Top with avocado slices then strawberry slices.

Caprese Avocado Toast

Ingredients

  • 1 slice of whole grain bread {or your favourite bread} toasted
  • 1/2 of an avocado mashed
  • 1 slice of tomato
  • 1 basil leaf
  • 1 slice large or 5 small slices of fresh mozzarella
  • extra virgin olive oil
  • salt and pepper

Instructions

  1. Spread mashed avocado onto the toast.
  2. Top with tomato slice, the basil leaf, then the mozzarella.
  3. Drizzle lightly with olive oil and sprinkle salt and freshly cracked black pepper.

Egg and Avocado Toast

Ingredients

  • 1 slice of whole grain bread {or your favourite bread} toasted
  • 1/2 of an avocado mashed
  • 1 egg
  • 1 teaspoon of olive oil
  • 1 teaspoon of parmesan
  • salt and pepper

Instructions

  1. Cook egg in a frying pan coated with olive oil on medium heat until yolk is cooked to your preference.
  2. Spread mashed avocado onto the toast.
  3. Place cooked egg on top.
  4. Sprinkle with parmesan and salt and pepper.
