I don’t know what it is about sandwiches but I think I’m obsessed. I love the variety! You can pick so many combos of delicious veggies and cheeses and spreads. And I almost always put avocado on mine 🙂 They’re so delicious and they add creaminess- no mayo needed!
The first time I made an avocado grilled cheese I was on vacation and we were nearing the end of our stay in our beach house rental. I checked the fridge for something to make for lunch but all I could find was an avocado and some cheese slices.
So I used the last pieces of bakery bread and layered avocado slices and some cheese and grilled it. And it was deeeelicious! The perfect, easy lunch to eat on the picnic table, looking out at the water 🙂
When I made this recipe I decided to up the flavour a bit and chose a lovely, crusty Italian bread and rubbed it with garlic. The subtle garlic flavour really elevates the sandwich- it makes it go from a good lunch to a restaurant-style sandwich!
You could definitely make this sandwich your own by adding tomato or other veggies. Or if you’re vegan you can use Daiya cheese.
Avocado Grilled Cheese
- 2 slices of crusty bread Italian or French are best, I used homemade Ciabatta
- 1 clove of garlic peeled and crushed by pressing the flat side of a knife onto the clove
- 1 slice of good quality cheddar
- 1/2 ripe avocado sliced
- salt and pepper
- extra virgin olive oil
First, take the crushed clove of garlic and rub the inner sides of your bread. Lightly brush outer sides of bread with olive oil.
Place cheddar slice on the garlic-rubbed side of one slice. Top with avocado slices. Sprinkle salt and freshly ground black pepper onto the avocado. Top with other slice of bread.
Grill your sandwich in a panini press or in a pan over the stove on medium heat until the bread is golden brown and the cheese begins to melt.
