I love fall, especially all the warming flavours. They remind me of when I was a kid- we would go to the apple orchard and pick as many apples as we could. Then come home and make apple pie with my dad. The smell of spices and sugary apples filled the house. I may be biased but my dad really did make the best apple pies. We would eat a piece at every meal. And I have to say, nothing can beat apple pie for breakfast.

And while apple pie for breakfast is crazy delicious, it’s not always possible. Apple spice oats are the perfect substitutionΒ πŸ™‚ They have all the flavour of apple pie. Not to mention they’re super healthy! Oatmeal is a great breakfast, it will keep you full until lunch and these overnight oats are made with Greek yogurt for extra protein. Also, you can eat these on the go, straight out of the jar {I wouldn’t recommend eating a slice of apple pie on the go πŸ˜‰ }.

If you haven’t had overnight oats before, it’s basically oatmeal that you make the night before. As they chill overnight, the oats absorb the liquid and soften, so in the morning you don’t even have to heat or cook them! I really like this because I find cooked oatmeal kind of gluey and overnight oats aren’t at all. You can totally warm them up in the morning if you want though πŸ™‚

Apple Spice Overnight Oats

Ingredients

  • 1/2 cup oats
  • 1/2 cup vanilla almond milk
  • 1/2 cup plain Greek yogurt
  • 1/2 an apple diced
  • 2 teaspoons honey
  • dash of cinnamon
  • tiny pinch of salt

Instructions

  1. Add all ingredients to a jar or bowl and mix well. Cover and refrigerate overnight. In the morning, eat cold or heat up in the microwave.

  1. I’ve been meaning to try overnight oats for a while and just haven’t done it yet. My kids LOVE oatmeal. This sounds perfect for busier weekday mornings. Does it matter what kind of oats you use? We usually get old fashioned rolled oats.

  2. This looks like a perfect grab and go breakfast too! Put everything in a mason jar and grab it on my way to work. Then I can eat it when I get to my desk. Can’t wait to try it.
